Ingredients:

For the filling: - 1 cup granulated sugar - 1/4 cup cornstarch - 1/4 teaspoon salt - 1 1/2 cups water - 4 egg yolks - 1/3 cup fresh lemon juice - 1 tablespoon grated lemon zest - 2 tablespoons unsalted butter
For the meringue: - 4 egg whites - 1/4 teaspoon cream of tartar - 1/2 cup granulated sugar
Instructions:
1. Preheat your oven to 375°F (190°C).
2. To make the crust, combine the flour and salt in a large mixing bowl. Add the diced butter and use a pastry cutter or your fingers to work the butter into the flour until the mixture resembles coarse crumbs.
