How to Bake a Treacle Fruit Cake
Treacle fruit cake is a delicious and traditional British cake that's perfect for serving with tea or as a dessert. Here's a recipe to help you bake your own treacle fruit cake:
Ingredients: - 225g unsalted butter, softened - 225g light brown sugar - 4 large eggs - 225g self-raising flour - 1 tsp mixed spice - 1 tsp ground cinnamon - 200g sultanas - 100g raisins - 100g currants - 50g chopped candied peel - 2 tbsp black treacle - 1 tbsp golden syrup
Instructions:
1. Preheat your oven to 150°C/300°F/Gas Mark 2.
2. Grease and line a 20cm/8inch round cake tin with parchment paper.
3. In a large mixing bowl, cream together the butter and sugar until light and fluffy.
4. Beat in the eggs, one at a time, until well combined.
5. Sift in the flour, mixed spice and cinnamon and fold in until just combined.
6. Stir in the sultanas, raisins, currants and candied peel.
7. In a small bowl, mix together the treacle and golden syrup until smooth.
8. Pour the treacle mixture into the cake batter and fold in until well combined.
9. Spoon the mixture into the prepared cake tin and smooth the surface with a spatula.
10. Bake for 2 to 2 1/2 hours, or until a skewer inserted into the centre of the cake comes out clean.
11. Remove the cake from the oven and allow it to cool in the tin for 10 minutes before turning it out onto a wire rack to cool completely.
12. Serve the treacle fruit cake sliced and enjoy!
Optional: you can decorate the top of the cake with candied fruit or nuts before baking, or drizzle with icing or glaze after baking.
