Ingredients: - 1 1/2 cups warm water (about 110°F) - 1 tablespoon active dry yeast - 1 tablespoon sugar - 2 cups mashed potatoes, cooled - 2 tablespoons olive oil - 2 teaspoons salt - 1 tablespoon dried herbs (such as thyme, rosemary, or oregano) - 5-6 cups all-purpose flour

Instructions:

1. In a large mixing bowl, dissolve the yeast and sugar in the warm water and let sit for about 5 minutes until the mixture is foamy.
