How to BBQ Brisket
Barbecuing brisket can be a lengthy process, but the end result is definitely worth it. Here are the general steps to follow to barbecue a delicious brisket:
Ingredients: - 1 beef brisket (10-12 pounds) - 1/4 cup paprika - 1/4 cup kosher salt - 1/4 cup black pepper - 1/4 cup garlic powder - 1/4 cup onion powder - 2 cups wood chips (hickory or oak)
Instructions:
1. Trim the Brisket: Start by trimming the excess fat from the brisket. Leave about 1/4 inch of fat on the surface.
2. Mix the Rub: In a bowl, combine the paprika, kosher salt, black pepper, garlic powder, and onion powder to make a dry rub.
3. Apply the Rub: Apply the rub to the brisket, making sure to cover all sides evenly. Wrap the brisket in plastic wrap and refrigerate it for at least 6 hours or overnight.
4. Prepare the Grill: Preheat the grill to 225-250°F. Soak the wood chips in water for at least 30 minutes.
5. Smoke the Brisket: Place the brisket on the grill, fat side up. Add the soaked wood chips to the smoker box or directly to the coals. Close the lid and let the brisket smoke for about 1 hour per pound of meat, or until the internal temperature reaches 195-205°F.
6. Rest the Brisket: Once the brisket has reached the desired internal temperature, remove it from the grill and wrap it tightly in aluminum foil. Let it rest for at least 30 minutes.
7. Slice and Serve: Slice the brisket against the grain and serve it with your favorite BBQ sauce.
