Ingredients: - 1 1/2 cups all-purpose flour - 1 tsp baking powder - 1/2 tsp salt - 1/2 cup unsalted butter, at room temperature - 1 cup granulated sugar - 2 large eggs - 1/2 cup freshly squeezed orange juice - 1 tbsp finely grated orange zest - 1/2 cup whole milk Instructions: 1. Preheat the oven to 350Β°F (175Β°C). Grease and flour a 9-inch cake pan. 2. In a medium bowl, whisk together the flour, baking powder, and salt. 3. In a large mixing bowl, cream the butter and sugar together until light and fluffy. 4. Add the eggs, one at a time, beating well after each addition. 5. Add the orange juice and zest, and mix until well combined. 6. Gradually add the flour mixture to the batter, alternating with the milk and mixing until just combined. 7. Pour the batter into the prepared cake pan and smooth the top with a spatula. 8. Bake for 25-30 minutes or until a toothpick inserted into the center of the cake comes out clean. 9. Remove the cake from the oven and let it cool in the pan for 5 minutes. 10. Run a knife around the edge of the cake to loosen it from the pan, then invert it onto a wire rack to cool completely. 11. Serve the orange sponge cake on its own or with whipped cream and fresh fruit. Enjoy!
