Vanilla wafers are a delicious and versatile treat that can be used in many desserts, such as banana pudding or cheesecake crusts. Here's a recipe to make your own vanilla wafers at home: Ingredients: - 1 1/2 cups all-purpose flour - 1/2 teaspoon baking powder - 1/4 teaspoon salt - 1/2 cup unsalted butter, at room temperature - 1/2 cup granulated sugar - 1 large egg - 1 teaspoon vanilla extract Instructions: 1. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside. 2. In a large bowl, beat the butter and sugar together until light and fluffy, about 2-3 minutes. 3. Add the egg and vanilla extract to the butter mixture and beat until well combined. 4. Gradually add the flour mixture to the butter mixture, mixing until just combined. 5. Divide the dough in half and shape each half into a log, about 2 inches in diameter. Wrap each log in plastic wrap and chill in the refrigerator for at least 1 hour, or overnight. 6. Preheat the oven to 350Β°F (180Β°C). Line a baking sheet with parchment paper. 7. Slice the dough logs into 1/4-inch thick rounds and place them on the prepared baking sheet, leaving about 1 inch of space between each cookie. 8. Bake for 12-15 minutes, or until the edges of the cookies are lightly golden brown. 9. Remove from the oven and allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely. 10. Store the vanilla wafers in an airtight container at room temperature for up to 1 week. Enjoy your homemade vanilla wafers!
